You might have noticed that some processed foods contain ingredients you probably can’t pronounce. Maltodextrin is one of those widely used, but little-understood food additives. So how are you supposed to know what it is and if it’s harmful to you?
Maltodextrin Is “Natural”
Foods labeled “natural” can be deceiving, and maltodextrin is no different. It’s derived from plants, but many are highly processed. Generally, maltodextrin comes from corn, rice, or potato starch. It also can be made from wheat. The starches are cooked and then acids or enzymes are added to break it down further, before resulting in a white powder. Some sources claim maltodextrin is sweet, but that’s because it’s used in conjunction with artificial sweeteners. Alone, it has a neutral or slightly sweet taste.
It Can Be Found in Numerous Foods
Maltodextrin is used as a thickener or filler because it’s relatively cheap. You may see it on the following product labels:
- canned fruits
- instant puddings and gelatins
- salad dressings
- powdered drinks
- some sugar substitutes
Maltodextrin is not only used as a filler, but has numerous benefits to texture, consistency and added shelf life. In many powdered products it is absolutely necessary to keep the product from clumping and/or gumming up, due to the tendency of such powders to absorb moisture from the air. It is used in order to turn liquid products into powders otherwise, these liquid products would never be possible to use in dry and/or powder formulas, such as cake mixes, herbal and flavor extracts, fruit juices, etc. The major question and concern should be the quality of the maltodextrin: is it non-gmo, organic, chemical treated, made from corn, wheat or what?

In this age of over-information, it should come as no surprise that there’s misleading and conflicting information when it comes to maltodextrin. Product labels aren’t required to mention how much of the additive is included. Instead, it’s added to the total carbohydrate count.
Though some vouch for it as a good option for people with diabetes, it can affect blood sugar even more dramatically than table sugar, and should be counted towards your daily carbohydrate load.
Though the FDA generally recognizes maltodextrin as safe, it pays to know what this food additive is and how it may affect you.
